The project Cantata 2, co-funded by the Operational Programme of Transnational Cooperation "Atlantic Area" aims mainly at creating a stable instrument of public and private partnership to promote and develop in a comprehensive way the resources related to food and agriculture, tourism and heritage in Galicia. A budget of € 511,726 has been approved for Galicia and a 65% will be financed by the European Regional Development Fund (ERDF).
 
In Galicia an innovative tourism product is being produced as part of this project: "Flavour routes of Galicia". A "flavour route" represents an itinerary that allows to know and enjoy, in an organized way, the agricultural and industrial production process and the local cuisine.
 
In order to implement the Galician flavour routes a range of products with unique characteristics were selected, many of them protected by Designations of Origin or other protected quality indications: the Galician cheese with Protected Designation of Origin (San Simón, Tetilla, Arzúa-Ulloa, Cebreiro), the Galician honey with Protected Geographical Indication (PGI), the Galician chestnut and traditionally raised farmyard poultry (Capón de Vilalba and rooster from Vila de Cruces).
 
The interaction of food processing and tourism activities related to the selected products was used as backbone for this project and four main pilot areas were designed:

Although "Flavour routes of Galicia" is initially intended to be developed in these four pilot areas, the scope may be expanded to further develop the image of the routes.
